Chilly days name for a superb pot of soup! I’m on a soup kick this season, with so many on my checklist to strive. Cauliflower Sausage Kale Soup is so tasty!

Elements:
1 Tbsp. Olive Oil
12 oz. Delicate Sausage
Three Slices Bacon, chopped
1 Medium Yellow Onion, chopped
2 Cloves Garlic, minced
6 c. Cauliflower Florets or Pearls (1 1/4lb.)
32oz. Hen Broth
1 c. Cocoanut Milk
Four c. Curly Kale, chopped
Recent Mushrooms
Kosher Salt & Pepper, to style

Instructions:
1. I choose to bake my bacon…place on a foil lined baking sheet & cook dinner at 400 till cooked to choice.
2. In a Dutch oven or giant pot, add sausage to brown. Take away & place in a bowl.
3. Add olive oil & yellow onion to cook dinner till delicate, about 3-Four minutes. Add in garlic for an additional minute.
4. Add cauliflower & hen broth. Season to style with salt & pepper. Simmer uncovered for 15 minutes or till cauliflower is tender.
5. Purée soup till clean in a blender or with immersion blender. {I didn’t have a working blender on the time, that’s why I opted to get the cauliflower pearls}
6. Add coconut milk and produce to a simmer. Stir in sausage, bacon, kale, & mushrooms. Proceed to simmer till kale is wilted, roughly 5 minutes.
7. Serve with a sprinkle of desired quantity of pink pepper flakes! Take pleasure in!!

Retains for 3-Four days in air tight container, not really helpful to freeze.
